It’s 2 in the morning why are you cooking a stew


So this isn’t the nicest looking thing in the world but it’s really cheap and easy (same) and tastes great too (not same) and can be made in large batches that will last ages (hopefully same)

part1Step one is throw a bunch of veggies and some herbs into a pan on medium heat, give it a healthy splash or three of oil and let it cook for about 10 minutes til it’s all nice and soft.

I used onion, potatoes, sweet potatoes and scotch bonnet chillis with some spare bay leaves, I think thyme would work great here.

p2Step two, add a bottle of stout beer, a can of chopped tomatoes and approx 50g of plain flour into the veggies and give it a good stir. Add some rock salt and pepper on top.

simmerBring it to the boil and then turn down the heat, place the lid on and let it cook for about 3 hours, take the lid off for the final half hour of cooking.

doneNice, your foods ready to go at this point, but I also recommend throwing it in the fridge and giving it as long as you can resist before eating it, the longer you wait the more time the meat gets to absorb those flavours.

Drink with a nice dark beer.
